Mazzou's Maple Granola-Crusted Chicken Breasts or Salmon filet

Maple granola-crusted chicken breast served salad-style
Maple granola-crusted chicken or salmon

I first fell in love with cooking when I was just seven or eight years old and it didn't take me long to begin experimenting and creating my own recipes.  Now,  several years later I am known for my love of  dreaming up new ways to present the most classic foods. I find that chicken and salmon are two of the best foods to experiment with new and unique flavors and seasonings!

Maple granola-crusted salmon filet
One of my more classic creations which is sure to please a variety of taste buds and which can be enjoyed year-round, is my newly-invented and perfected maple granola-crusted chicken breast or salmon filet....I promise you, from the first bite you will be delighted by the combination of flavors!

Ingredients:
4 boneless skinless chicken breasts (6.4 oz each) or 4 four-six ounce wild alaska salmon filets
1/4 plus 1/8 tsp. salt (or to taste; the goal is to sprinkle evenly over each piece of meat)
1/4 tsp. pepper or to taste
1 large clove garlic, crushed
2 Tablespoons melted butter (or olive oil)
1 Tablespoon tamari soy sauce
2 Tablespoons maple syrup
1 cup Golden Girl Forest Maple granola
3 eggs
1 Tablespoon butter or oil for browning meat.

   Prepare meat 1-8 hours ahead:

1. Gently pound out chicken breasts to about 3/4 inch thick, focusing mostly on the thick portion of the chicken breasts (skip this step if using salmon).
2. Sprinkle each breast or filet evenly with salt and pepper. Place meat in a 4 cup capacity glass dish or container.
3. Mix together the garlic, butter, soy sauce and maple syrup. Pour over chicken breasts or salmon and cover dish tightly.
4. Let chicken marinate at least a couple of hours; preferably overnight. Only let salmon marinate 1-3 hours.
   To cook meat:
1. Prepare granola by separating 6 Tablespoons from the cup of granola; place in a plastic baggie and crush with a rolling pin.
2. Pour the entire cup of granola (crushed and whole) in a shallow dish.

3. In another bowl, whisk the eggs.
4. Remove chicken breasts or filets from marinade, reserving marinade. Dip each chicken breast or filet first in the egg mixture, then in the granola mixture, pressing the granola into the meat (with the salmon, press into the pink fleshy side, not worrying too much about the skin side).
5. Heat olive oil or butter in a shallow frying pan on medium heat; gently brown each chicken breast in the oil. Add more oil to pan as needed to keep meat from sticking. Fry for about 2 minutes per side. Follow same directions for salmon, only fry skin-side down for 3 minutes without flipping.

6. Place golden-browned meat in a 9x13 baking dish, drizzle reserved marinade over and bake at 350° Fahrenheit  for about 20 minutes or until chicken temperature is 165° Fahrenheit. For salmon: bake at 350° Fahrenheit for 7 minutes or until meat flakes easily when cut with a fork.

 To serve:
The maple granola-crusted chicken breasts or salmon filet can be served warm from the oven, drizzled with a honey mustard dressing and accompanied by a salad and roasted potatoes. Or, let chicken cool a little more and slice. Serve chicken slices on a bed of fresh green salad and drizzle with a honey mustard dressing.

Natural solution to orthodontic pain! How I naturally avoided pain during headgear treatment

Pain...
it's something we've feared since we were born! Nobody chooses to experience pain, yet it's constantly threatening us in even the smallest daily activities!
Sometimes pain is accepted as a necessary side effect of a good thing. And in some instances that is true. Childbirth comes to mind. However, wouldn't it be great if we could do something to lessen some of the pain in our lives?
I have many options, but the one I have been most recently relying on is...Cayenne pepper!
Although an adult, I recently got orthodontic braces and just this week began wearing headgear. To even my own surprise, I breezed through the first 15 hours straight without more than a little pain near the end of those hours! I have continued to don the unusual device and although I can tell my teeth are moving (tenderness is obvious), I have not really suffered any pain.
The reason this time? Cayenne pepper! For the 10 days preceding my orthodontic appointment, I downed 4 gelatin capsules of Cayenne pepper daily!
Cayenne has been proven to lessen sensitivity to pain. I cannot tolerate spicy foods, so I ingested the pills instead of flavouring my food daily with the spice.

Vitacost is our favourite place to purchase health supplements and herbs and spices! Sign up through our referral link and then search Cayenne pepper. You can buy the spice loose, and then add empty gelatin capsules to your order. Or you can purchase already capsuled Cayenne.
Choose what best suits your needs, and then add this beneficial spice to your daily routine!

Since I mentioned orthodontic care, I want to mention that cayenne in capsules is an excellent option for giving your child who is ''suffering'' orthodontic treatment! Not all children can tolerate heavily-spiced foods, yet many can swallow capsules, making this the perfect solution to their pain/discomfort.

In which I 'ruin' your life....and save it! ;)

Dear readers, both ladies and gentlemen,

I have been wanting to share certain interesting (to put it mildly) health truths with you for a while and it has been hard to choose just one subject a week!
I shall begin with one of the most crucial.....the truth behind most of your skin care, hair care and for the ladies: your beauty care products!
Including many 'natural' or organic items.

Of course it's not the most comfortable thing to read about,
since you will have to do a major clean-up of your home;
but if you heed the warnings you will be able to drastically help your health.
Most of the items listed below have been proven to be linked to cancer, and several other problems. You will be absolutely surprised if you start reading the ingredients labels on even your 'natural' products. A few years ago my mother printed out a list she found on Dr.Mercola's site, and I threw out several items which were too much in collusion with the following items. But over the recent years, several things managed to creep back into my drawer/purse. Well. I found the following list again this past week: And out to the garbage went many little items again! I know many of you girls already by really natural items. We have found a few good sites featuring truly natural and safe items.
I will share them with you in the next post! Feel free to also pass on your suggestions.

Here are a few of the most common suspicious ingredients:
(Thanks to Dr. Mercola for compiling and explaining them!)

Mineral Oil, Paraffin, and Petrolatum – Petroleum products that coat the skin like plastic, clogging pores and creating a build-up of toxins, which in turn accumulate and can lead to dermatologic issues. Slows cellular development, which can cause you to show earlier signs of aging. Suspected cause of cancer. Disruptive of hormonal activity. By the way, when there's an oil spill in the ocean, don't they rush to clean it up – fast? Why put that stuff on your skin?
Parabens- Widely used as preservatives in the cosmetic industry (including moisturizers). An estimated 13,200 cosmetic and skin care products contain parabens. Studies implicate their connection with cancer. They have hormone-disrupting qualities.....
Phenol carbolic acid- Found in many lotions and skin creams. Can cause circulatory collapse, paralysis, convulsions, coma and even death from respiratory failure.
Fragrance:Fragrance is present in most deodorants, shampoos, sunscreens, skin care, body care and baby care products. Many of the compounds in fragrances are carcinogenic or otherwise toxic. "Fragrance on a label can indicate the presence of up to 4,000 separate ingredients. Most or all of them are synthetic. Symptoms reported to the FDA have included headaches, dizziness, rashes, skin discoloration, violent coughing and vomiting, and allergic skin irritation. Clinical observation by medical doctors have shown that exposure to fragrances can affect the central nervous system, causing depression, hyperactivity, irritability, inability to cope, and other behavioral changes.' Home Safe Home

Propylene glycol (PG) – Used as a moisturizer in cosmetics and as a carrier in fragrance oils. Shown to cause dermatitis, kidney or liver abnormalities, and may inhibit skin cell growth or cause skin irritation. As a 'surfactant' or wetting agent and solvent, this ingredient is actually the active component in antifreeze. There is no difference between the PG used in industry and the PG used in personal care products. It is used in industry to break down protein and cellular structure (what the skin is made of) yet is found in most forms of make-up, hair products, lotions, after-shaves, deodorants, mouthwashes and toothpastes. It is also used in food processing. Because of its ability to quickly penetrate the skin, the EPA requires workers to wear protective gloves, clothing and goggles when working with this toxic substance. The Material Safety Data Sheets warn against skin contact, as PG has systemic consequences such as brain, liver and kidney abnormalities. Consumers are not protected nor is there a warning label on products such as stick deodorants, where the concentration is greater than that in most industrial applications.
This active ingredient is found in engine coolants and antifreeze, airplane de-icers, tire sealants, rubber cleaners, polyurethane cushions, paints, adhesives, enamels and varnishes, and in many products as a solvent or surfactant.
And guess what? Despite the fact the material safety data sheet warns users to avoid skin contact with propylene glycol as it is a strong skin irritant and can also cause liver abnormalities and kidney damage, it's more than likely in your shampoo.

Acrylamide- Found in many hand and face creams. Linked to cancerous tumors in lab research!!!

Sodium laurel or lauryl sulfate (SLS), also known as sodium laureth sulfate (SLES)- Found in car washes, engine degreasers, garage floor cleaners......and in over 90 % of personal care products!
SLS becomes a ''nitrosamine'', a potent class of carcinogen. It can also cause hair loss. SLES is sometimes disguised with the labeling ''comes from coconut'' or ''coconut-derived''. Although SLS originates from coconuts, this chemical is anything but natural!
Used as detergents and surfactants, these closely related compounds are found in car wash soaps, garage floor cleaners and engine degreasers. Yet both SLS and SLES are used more widely as one of the major ingredients in cosmetics, toothpastes, hair conditioner and about 90% of all shampoos and products that foam.
Mark Fearer in an article, Dangerous Beauty, says "...in tests, animals that were exposed to SLS experienced eye damage, along with depression, labored breathing, diarrhea, severe skin irritation and corrosion and death." According to the American College of Toxicology states, "...both SLS and SLES can cause malformation in children's eyes. Other research has indicated SLS may be damaging to the immune system, especially within the skin. Skin layers may separate and inflame due to its protein denaturing properties. It is possibly the most dangerous of all ingredients in personal care products. Research has shown that SLS when combined with other chemicals can be transformed into nitrosamines, a potent class of carcinogens, which causes the body to absorb nitrates at higher levels than eating nitrate-contaminated food." According to the American College of Toxicology report, "SLS stays in the body for up to five days...Other studies have indicated that SLS easily penetrates through the skin and enters and maintains residual levels in the heart, the liver, the lungs and the brain. This poses serious questions regarding its potential health threat through its use in shampoos, cleansers and toothpaste.

Toulene- Poison!Danger! Harmful or fatal if swallowed! Harmful if inhaled or absorbed through the skin. Made from petroleum or coal tar, and found in most synthetic fragrances. Chronic exposure linked to anemia, lowered blood cell count, liver or kidney damage, and may affect a developing fetus.

Butylated hydroxytoluene (BHT) contains toluene. Other names may include
benzoic and benzyl.

Dioxane– Found in compounds known as PEG, Polysorbates, Laureth, ethoxylated alcohols. Common in a wide range of personal care products. The compounds are usually contaminated with high concentrations of highly volatile 1,4-dioxane, easily absorbed through the skin.
Dioxane's carcinogenicity was first reported in 1965 and later confirmed in studies including one from the National Cancer Institute in 1978. Nasal passages and liver are the most vulnerable. Dioxane is easily removed during the manufacturing process by "vacuum stripping". Warning: It is a synthetic derivative of coconut. Watch for hidden language on labels, such as "comes from coconut"

*I suggest that you print out the above list, or jot down all those chemicals so you can make sure your home is poison-free as well! *

Dr. Mercola says: ''We believe containers when they show a "danger" warning, or a "skull and crossbones" to warn of toxins in a product. And we respond by not applying them to our skin or eating them!
Yet many skin care products use ingredients with unrecognizable and unpronounceable names.

Personally, I rarely put anything consciously on my skin that I wouldn't be willing to put in my mouth.
It is well-proven that when you apply these chemicals to your skin, they enter your bloodstream and become integrated into your body tissues, In fact, it is probably safer to eat these ingredients than to rub them on your skin (although I strongly recommend you don't do either!).
However, if you do happen to eat these chemicals, your digestive system can produce specific enzymes to break down these toxins and excrete them… something that doesn't readily occur when you absorb them through the skin.
Potentially harmful ingredients continue to be used. Why? Because they are cheap, readily available, and easily diluted.''

I close with the promise that in the near future I will share some resources and ideas to replace some of the products which I hope and trust you are going to make haste to throw away now....!
